PASTA WITH SARDINES

The pasta with sardines and ´one of the typical dishes of Sicilian cuisine.
The basic ingredients of this dish are sardines, wild fennel mountain and the bucatini pasta, but also busiate (typical pasta Trapani).

Ingredients for 4 people:

500 g of fresh sardines, bucatini 500 g, 500 g of wild fennel, 2 medium onions or 1 large onion rather, 3 salted anchovies in salt, 50 g of grapes and raisins as many pine nuts, 3 cloves garlic, salt and pepper enough.

preparation:

chop the onion and garlic, sauté and add the anchovies to flavor.

then add the pine nuts and sultanas / raisins, add the sardines previously spicchiate without bones and wild fennel that you have previously blanched with a bit of natural water.

salt and pepper and cook everything.
add a little water and that ´fennel remained blanched, stain with a bit of tomato sauce.

cook for 35 minutes.

Cook the pasta al dente bucatini and get her out, drain and place in a pan with the sauce ready sardines, stir for 5 minutes.

the game and ´done, serve with a sprinkling of toasted breadcrumbs.
